AKKI ROTI OR RICE ROTI




This is traditional Karnataka (Malnad) special. There are various methods like dry roti, wet roti (masala roti), rotis made using cooked rice etc. This one is made using cooked rice ( left over rice can also be used).

Ingredients :

Cooked rice- 1 1/2 cups
Rice flour- Enough to form a dough( roughly the same quantity as cooked rice)
salt as required
little hot water to mix the dough

Method :

Put rice in big bowl. Add salt and rice flour and mix well. Add little hot water and knead well to medium soft dough. Make medium sized balls and keep it on a puri press (place the dough between two oiled plastic sheets) and make it into a round roti. (Traditionally the roties are made using bare hands!). Heat a tawa and place the roti on it. When slightly roasted, turn it and use a wet cloth and press on all sides. When it is done, put the first side on dry heat and roast till golden brown.


This comes well only by practice. Tastes good if eaten hot, with copra chutney powder and curds, Peanut chutney powder and curds, stuffed brinjal or Bindi (lady's finger) gravy and pickles.
