Traffic Light Bell Pepper Rice

I had this tasty rice at my cousins place. Back home, I tried this recipe and it came out really good. I just used different color of bell peppers for a great look and now we call it the Traffic Light Rice.
Here we go, to the making of the rice





Ingredients

Bell Pepper/Capsicum - 3 [ Cut in small squares]
Butter- 2 tsp
Cooked Rice - 2 Cups
Gingerly Oil - 1 tsp
Curry leaves - few
Cilantro/Coriander - few

To grind

Red Chilli -5
Mustard Seeds - 1 tsp
Urad Dhal - 2 tsp
Coriander Seeds - 2tsp
Peanuts - a handful
Garam Masala - 3tsp /desired amount

Method :
Dry roast the spices on low flame. Take care not to burn the dhals. Fry until the mustard seeds crackle. Remove from stove , set aside for 10 mins. Grind this to a coarse powder along with garam masala. Heat wok/pot. Add butter. Once it melts, add the bell peppers and fry. Do not make it too soft.Add the gounded powder ,stir and remove from stove. Add the cooked rice and a tsp of gingerly oil. Garnish with cilantro.
