VANILLA CAKE





This is a simple sponge cake.I saw this recipe in a magazine and have done it several times. It comes out really well.



INGREDIENTS :

Maida (flour)- 1 cup (120 gms)
Powdered sugar - 3/4 cup
Egg- 2
Cooking Butter- 3/4 cup
Baking powder- 1 tsp
Vannila essence- 1 tsp
Salt- A pinch
Milk- less than 1/4 cup
Chopped alomonds, cashews, kismis (dried grapes), walnuts- 2 to 3 Tbsp

Method :

Separate the egg white and yellow and keep them in dried vessels. Beat the white till fluffy. Sieve maida, bakingpowder, and salt twice. Beat butter and sugar till fluffy. To this, add egg yellow, essence, milk, maida and mix clockwise till all the ingredients blend together. Then add the egg white, chopped nuts and mix. (The consistency when taken in a flat spatula, should fall like ribbon. If it is thick, add little milk). Pour it in a greased vessel and bake in a pre-heated oven till it turns golden brown colour.

After it cools down cut into pieces.

Variation- After mixing, add 3 to 4 spoons of chocolate syrup.
