Kadaichal is a recipe told to me by my mother-in law. Its one of the best chutney that goes along with Idly.
Ingredients :
Brinjal / Eggplant, small & purple- 1\2 Kg, cut
Tomatoes - 1\2 kg, cut
Green Chili - 4, medium Sized,slitted
Garlic - 3 ,medium sized
Onions - 2 medium ones, cut
Salt - As required.
Tempering:
Oil- 3 Tsp
Mustard seeds - 1tsp
Asafoedia - 1\4 Tsp
Few Curry leaves
Method:
Pressure cook together , brinjals, onions , tomatoes, chillies and garlic with a tsp of oil for 5 whistles.Allow them to cool. Save the vegetable water.Add the cooked vegetables to the mixer and grind.[Do not grind finely]. Heat oil in kadai. Add the mustard seeds, after it splutters add the asafoedia and curry leaves. Add the kadaichal , sprinkle salt .Stir and bring it to boil. You can add the saved vegetable water if the mixture is too thick.Serve with hot Idlis.
PS:
* Add or reduce the green chillis according to spiciness.
* Egg Plant / Brinjals and tomatoes should be of equal quantity.
