"DUM" BRIYANI


This is a very easy method and tastes really good. Whenever my younger sis comes here, this will be the first dish she asks for!!!

Ingredients:


Basmati rice - 2 cups
Big onion - 2
Tomato - 4
Carrot - 1
Beans - 6 to 8
Potato - 1
Peas - little
Green chilli - 2 ( slit lengthwise)
Sour curd - 1/2 cup
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Ginger garlic paste - 1 tbsp
Chopped Pudina, coriander leaves- each handful
Butter - 50g

For seasoning : Cardomon- 3, Cinnamon - 1 small piece, Cloves- 3, Oil- 2 Tbsp

Method :

Wash the rice and soak in water. Chop the vegetables. Add oil in a cooker and add the seasoning.
Add chopped onions, ginger garlic paste. Add butter, saute and add vegetables, pudina, coriander, green chilli. Fry for a while and add curd and saute till the oil separates in a low flame.
Meanwhile, boil water in a vessel add salt and cook the rice till it splits. pour the water and spread the rice on a plate.
Now add the rice and press gently. Tie a wet towel around the vessel mouth and close it with a plate. Keep a tawa and place the cooker on it and keep it on low flame. Keep a weight on the
plate. Keep it for "Dum" for 30 mins.

Serve hot with onion or cucumber or aloo raitha.
